In the Kitchen: Buttermilk Waffles

On a cold winter morning there is nothing I want more than to stay in my pajamas and warm up with a rich breakfast. My parents gave us a new waffle maker last fall, and these buttermilk waffles have been on serious rotation lately. I think they are easier than pancakes because the waffle maker does the majority of the work for you. Plus, almost anything tastes good when slathered in butter and maple syrup. 

Buttermilk Waffles 

1 cup flour 
1 teaspoon baking powder
1/2 teaspoon baking soda 
1/4 teaspoon salt 
2 tablespoons sugar 
1 cup buttermilk 
1 egg 
1 tablespoon vanilla extract 
2 tablespoons butter, melted 

Preheat your waffle iron. 

Combine flour, baking powder, baking soda, salt, and sugar in a large bowl. Slowly mix in wet ingredients. Mix until just combined. The mixture will be lumpy but that is ok. 

Spray waffle iron with a non-stick spray or melted butter. Pour 1/3 cup waffle mixture into waffle maker, and cook until desired doneness. Serve with warm maple syrup and butter.
