In the Kitchen: Pimento Cheese

Pimento cheese always triggers memories of summer. It reminds me of my childhood, where I used to spend the entire day at the pool, and now it reminds me of Will. We started dating at the end of the summer and Will was just starting to learn to cook. The first meal he made me was pizza, but a pimento cheese sandwich came soon after that. We've played around the recipe over the years, adding pickle relish and a little heat, but this is a simple dish that will always remain dear to us. 

Pimento Cheese 
8 oz sharp cheddar cheese, shredded 
1/4 cup roasted red peppers, diced 
2 tablespoons dill pickle relish 
1/8 cup mayo 
4 dashes hot sauce 
1 teaspoon fresh ground pepper 
1 teaspoon rubbed sage 

Combine all ingredients and mix well. Chill for at least 30 minutes. Enjoy immediately or store in refrigerator for up to 1 week. Serve on a sandwich, with crackers, or straight out of the jar.
