Enchiladas Verdes

Last night my Aunt came to town, so naturally this called for a fiesta. I have been searching for a good enchiladas verdes recipe, and this one was perfect. The verde sauce was delicious and needed no altering. I did add a little of the sauce and cheese to the enchiladas as I was rolling them. I feel that extra cheese is always the best choice. They came out warm, gooey, and full of flavor. Plus, I had a little verde sauce left over which I will be eating with chips for the rest of the week.
